I'm wondering how much more volunteering/extracurriculars I should do in order to truly be competitive when applying for med school. I've done the whole volunteering in the ER thing (which i'm sure everyone's done), i ran a summer camp, i've volunteered in a research lab/i'm doing a honour's project and also volunteered during the school yr for Right to play. What are my chances assuming my gpa is competitive?

Subject to maintaining GPA as a priority always, it is good to do/continue with ECs/volunteering of interest as active citizenship is an important ingredient in the mix.

As long as the positions you're describing are high quality, your chances are good. By quality I mean instead of being a regular member of a club (which is good, if it's long-term), it's of course even better to be a long-term executive. Doing things that show initiative is also good (like leading the summer camp).
