I'm very interested in going to med school, but am afraid that my undergraduate GPA may not be high enough to be considered. Has anyone heard of doing a second Bachelor's degree (i.e. one that only takes two years to complete after your initial degree)? I'm really interested in taking a minor in a certain subject, but I won't have enough room for all the requirements..so I was thinking this might be a good option. How would medical schools factor in these extra two years of undergraduate study in terms of calculating a GPA?

As a rule, med schools can vary quite widely in how they analyze your undergrad marks. The safest course of action is to contact the med schools directly to see how they evaluate your grades. This will help you decide whether it is worth the 2 year time investment to go back for that second degree.
